Product Description
Polyglycerol ricinoleate is a food additive obtained by esterifying glycerol with condensed ricinoleic acid. It appears as a yellow, highly viscous liquid without any odor or with a slightly specific smell. It is soluble in ether, hydrocarbons, halogenated hydrocarbons and oils, but insoluble in water and ethanol. As an oil-in-water emulsifier, it has excellent thermal stability. At 90ºC for 14 days, the color change is minimal. It is mainly used in cocoa products, chocolate and its products, ice cream coatings. The maximum usage amount is 5g/kg. When used in combination with lecithin, it can reduce the viscosity of chocolate slurry and decrease the amount of cocoa butter.
